I have recently been diagnosed with hypoglycemia, so I am still learning about the symptoms, warning signals, etc. I have told family members where I keep the Level Glucose Packs so they know where to go to help me. 				<content:encoded><![CDATA[<p>In my never ending quest looking for delicious foods to replace their higher carb, unhealthy counterparts, I&#8217;ve found another recipe to share with you! Mashed potatoes are delicious, but pure carbohydrates which is disastrous for my blood sugars.</p>
<p>The answer? Mashed Cauliflower! Its a great way to consume your veggies and go low carb in a big way! See my recipe below for this quick and easy snack or side-dish.</p>
<p>&nbsp;</p>
<p><b>Directions:</b><br />
1. Put water in a stockpot and boil over high heat.<br />
2. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well.<br />
3. In a bowl with a food processor (or mash by hand), puree the hot Cauliflower, Unsalted Butter, Parmesan Cheese, Garlic, Salt and Pepper until almost smooth.</p>

<div>Dress it up: Roast the garlic and add a little fresh rosemary for extra flavor!</div>

				<content:encoded><![CDATA[<p>When I meet people and tell them I have Type 1 diabetes – their first response is almost always the same….Is that the good kind or the bad kind?</p>

<p>To be honest – I’m never sure how to respond. The truth is that neither is good and neither is bad. Diabetes for most people is a challenge at any age for either type. These days 84%+ of people with diabetes take medication and test their blood sugar (the true grievances of people living with diabetes). To be clear:</p>
<p><b>Type 1</b> is typically an auto-immune disorder which presents its self earlier in life which is why many people are diagnosed when they are kids like myself. However, these days, adults are being diagnosed with it as well.</p>
<p><b>Type 2</b> has historically been a disease that is diagnosed in adults who have high blood sugar or insulin resistance sometimes caused by being overweight, not being active enough or their eating style. However, kids today are being diagnosed with Type 2 as well.</p>
<p>Although some may say they are different diseases – I disagree. Our challenge is the same: Fighting High and Low Blood Sugars. It comes down to how we eat and how we utilize tools like insulin and diabetes medications to our advantage.</p>
<p>We all know the simple diabetes equation to blood sugar control: What We Eat = How We Feel. Thus we learn to stay away from foods high in carbs and sugar because we they will spike our blood sugar. This applies to everyone with diabetes: Type 1 and Type 2.</p>
<p><em><strong>At the end of the day, diabetes is a word that describes an amazing group of people fighting high and low blood sugar, 24/7 – 365 days a year.</strong></em><br />

<p>+ Carefully take a fork and begin scraping the inside of the squash creating a &#8220;spaghetti-like&#8221; resemblance.</p>

+ Place the whole squash in a shallow microwave safe dish with a little water.</p>
<p>+ Microwave for 6-8 minutes.</p>
<p>+ CAUTION: Squash will be very hot – let it cool for 10 minutes before handling</p>
<p>+ Cut the squash in half, and scoop out the seeds.</p>
<p>+ Carefully take a fork and begin scraping the inside of the squash creating a &#8220;spaghetti-like&#8221; resemblance.</p>
<p><b>Once The Spaghetti Squash has Cooled:</b><br />
+ Mix tomatoes and italian seasoning and cook for 5 minutes to create a healthy marinara <a href="http://recipes.sparkpeople.com/recipe-detail.asp?recipe=658724">sauce</a>.<br />
+ Spoon spaghetti squash onto a plate and top with marinara sauce.</p>

<h4>For me, I try and keep it simple. With my insulin doses based on what I eat, I stick to four key principles for eating both at home and when I&#8217;m out:</h4>
<h4>Keep the <span style="text-decoration: underline;">carbs low</span>. This helps control your weight and your diabetes. If you follow this, you will likely have less highs and less lows.</h4>

				<content:encoded><![CDATA[<h3>          Managing diabetes is more than keeping track of your blood sugar. As with lots of things, your diet plays a key role in maximizing your health. I wanted to share some basic tips that were given to me on my journey to making the right food choices.</h3>

<h3 style="text-align: center;">Here are my <span style="text-decoration: underline;">4 steps</span> to making healthy food and lifestyle choices with diabetes!</h3>
<h3></h3>
<h2><span style="text-decoration: underline;">Tip 1: Choose high fiber, slow-release / low carbs.</span></h2>
<h3>Carbohydrates have a HUGE IMPACT on your blood sugar levels—more so than fats and proteins—but you don’t have to avoid them. You just need to be smart about what types of carbs you eat.<br />
In general, it’s best to limit highly refined carbohydrates like white bread, pasta, and rice, as well as soda, candy, and snack foods. Focus instead on slow-release carbs like whole wheat’s and multi-grains.</h3>
<h3></h3>
<h2><span style="text-decoration: underline;">Tip 2: Choose fats wisely</span></h2>
<h3>Fats can be either helpful or harmful in your diet. People with diabetes are at higher risk for heart disease, so it’s important to choose the right fats. Some are unhealthy and others have enormous health benefits. However, all fats are high in calories, so you should always watch your portion sizes.</h3>
<h3>~ Unhealthy fats: The two most damaging fats are saturated fats and trans fats. Saturated fats are found mainly in animal products such as red meat, whole milk dairy products, and eggs. Trans fats, also called partially hydrogenated oils, are created by adding hydrogen to liquid vegetable oils to make them more solid and less likely to spoil—which is very good for food manufacturers, and very bad for you.</h3>
<h3>~ Healthy fats: The best fats are unsaturated fats, which come from plant and fish sources and are liquid at room temperature. Primary sources include olive oil, canola oil, nuts, and avocados. Also focus on omega-3 fatty acids, which fight inflammation and support brain and heart health. Good sources include salmon, tuna, and flaxseeds.</h3>

<h2><span style="text-decoration: underline;">Tip 3: Eat regularly</span></h2>
<h3>Your body is better able to regulate blood sugar levels—and your weight—when you maintain a regular meal schedule.<br />
~ Don’t skip breakfast. Start your day off with a good breakfast. Eating breakfast every day will help you have energy as well as steady blood sugar levels.<br />
~ Eat regular small meals—up to 5 to 6 per day. People tend to eat larger portions when they are overly hungry, so eating regularly will help you keep your portions in check.</h3>
<h3>~ Keep calorie intake the same. Regulating the amount of calories you eat on a day-to-day basis has an impact on the regularity of your blood sugar levels. Try to eat roughly the same amount of calories every day, rather than overeating one day or at one meal, and then skimping on the next.</h3>
<h3>Research shows that people who keep a food diary are more likely to lose weight and keep it off.</h3>
<h3></h3>
<h2><span style="text-decoration: underline;">Tip 4: Be active</span></h2>
<h3>When it comes to preventing or controlling diabetes, you can’t afford to overlook exercise. Exercise can help your weight loss efforts, and is especially important in maintaining weight loss. There is also evidence that regular exercise can improve your insulin sensitivity even if you don’t lose weight.</h3>
<h3><em id="__mceDel" style="font-size: 1.17em;"><em id="__mceDel">You don’t have to become a gym rat or adopt a grueling fitness regimen. One of the easiest ways is to start walking for 30 minutes five or more times a week. You can also try swimming, biking, or any other moderate-intensity activities—meaning you work up a light sweat and start to breathe harder. Even house and yard work counts.</em></em></h3>

				<content:encoded><![CDATA[<p>With the holiday season behind us and a New Year ahead, reality has set in—winter is here! This makes managing our diabetes more challenging. We now have to deal with everything from the flu season, cold-weather circulatory issues and new roadblocks to exercising.</p>
<p><span id="more-17100"></span></p>
<p>For me, this started a few weeks ago when I began to notice I was having a hard time testing my blood sugar. Every time I would test, I’d yield half as much blood because my fingers were cold and the blood wasn’t flowing like it should. This made testing more painful and frustrating. Next, many of us are dealing with some type of cold or flu. For me, this usually means my blood sugar’s are sky high and my insulin is much less effective. It seems as though when we’re sick, we’re battling both the illness itself and high blood sugar, doubling our challenges.</p>
<p>However, on the days when you feel well, don’t let the cold weather get you down. For those of you who like to get their exercise outside (walking, running, biking and more), do not let the cold weather stop you. It’s easy to skip your workout routine when it’s cold out, but it’s also an excellent opportunity to stay inside and do some basic exercises in the house. This includes anything from sit-ups and push-ups to stair-walkers (yes, this means walking up and down the stairs for 30 minutes at a time).</p>
<p>The point is, while the winter is here, our diabetes discipline must be at an all-time high to combat the nasty effects of cold weather. Remember, diabetes can be made easier with a little bit of work and exercise.</p>
